Best Ever Chocolate Chip Cookies
These little cookies are the most simple recipe to make and absolutely delicious!!! They are the perfect cookie to make first in order to learn the basics of cookie baking, so lets get started!
First, make sure your butter is softened- not melted but soft enough to beat until smooth in your mixer. Add 1 cup butter, 1 cup granulated sugar, and 1 cup packed light brown sugar to your stand mixer. I love my professional grade Kitchen Aid 6Qt. Bowl Lift Stand Mixer, and my mom and sister have the Kitchen Aid 5Qt. Tilt-Head Stand Mixer.
Start on low speed until mixed and increase to medium speed to cream. It is very important to beat your butter and sugars until light in color, fluffy, and has zero chunks of butter or sugar. Scrape down your bowl and beat again to ensure all of the butter is free from the sides of the bowl.
Add 2 eggs, one at a time, and 2 teaspoons Watkins Vanilla Extract while mixer is on low speed. Scrape down bowl and mix until smooth.
While mixer is on low speed, add 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, and 3 cups all purpose flour- one cup at a time. Once the flour is incorporated stop the mixer! It is very important not to over mix at this stage.
Chocolate chips are the most important part of any chocolate chip cookie! Slowly add 2 cups semisweet chocolate chips as the mixer is moving at a slow speed. Stop once all of the chocolate is added to the bowl and mix the rest by hand to ensure you do not over mix the dough.
Scoop the dough in 2-3 Tablespoon round balls with a cookie scoop and place approximately 2 inches apart on a baking sheet pan lined with parchment paper. Bake at 375*F for about 10-12 minutes. The cookies should start to be golden brown on the outside edges, it is important to not overbake the cookies to ensure they are soft and chewy.
Once removed from the oven press the cookies down with a spatula, remove from pan, and place on a wire cooling rack. Because these cookies are a thick, dense style cookie, pressing them down with the spatula evenly disperses the thickness.
Add other mix ins for different versions!!! My best friend’s favorite is chocolate chip M&M cookies so I added 1 cup of M&Ms to a batch of dough with the 2 cups of chocolate chips for her.
Ingredients:
- 1 cup butter, softened (2 sticks)
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 large eggs
- 2 teaspoons Watkins Vanilla Extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups all purpose flour
- 2 cups semisweet chocolate chips
Instructions:
Preheat oven to 375*F.
Cream butter, granulated sugar, and brown sugar in stand mixer until light and fluffy.
Add eggs one at time and Watkins Vanilla Extract until incorporated.
Add dry ingredients- baking soda, baking powder, salt, and flour. Mix until blended.
Add chocolate chips, then stir by hand to not over mix the dough.
Scoop in 2-3 Tablespoon rounds using a cookie scoop, place on a baking sheet pan lined with parchment paper about 2 inches apart.
Bake 10-12 minutes, until golden brown around the edges. Press the cookies down with a spatula to evenly disperse the thickness of the cookies.
Move cookies to a wire cooling rack to cool down.
Yields about 3 dozen cookies.
